Cowboy Cookie Mix in a Jar

These are the BEST cookies I've ever had!!! I take them to work for birthdays and other celebrations and everyone always begs for the recipe. Everyone who receives them as a gift begs to get them again next year :-) One change I would make is to switch around the order they tell you to package the ingredients. Layer the chunky items (like chips and nuts) on top of the flour/sugar etc. Otherwise they end up covered up by settling flour and sugar. Use a widemouth jar, and make sure you pack the ingredients TIGHT, otherwise it won't all fit. These cookies are fabulous in every sense of the word!!!

Spring Strawberry Spinach Salad

This salad is wonderful. Everyone (even spinach salad haters) go GAGA over it. The sweet, tangy dressing is heavenly when combined with the strawberries and spinach. This salad is always a crowd favorite, and it's always requested at potlucks and dinners. I always add a few strawberries to the dressing and let it sit in the fridge to cool for an hour or so before serving. The dressing ends up a beautiful pink color and the strawberries really dress it up! It's a nice way to bring back summer if you can find strawberries out of season in your grocery store, and goes well with just about any meal you could possibly think of.

Chicken Tikka Masala

This recipe was absolutely wonderful!!! It tasted JUST LIKE my favorite restaurant's recipe. I used less salt in each the chicken and sauce as suggested by other reviewers (about a teaspoon). This is one of the best recipes I've tried in a very long time! I will DEFINITELY make this again!

Six Can Chicken Tortilla Soup

I used stewed tomatoes and two small canned jalapenos instead of the tomatoes w/chilis and fresh chicken instead of canned. I still felt that it needed something though, so I added some dried minced onions and a big teaspoon full of minced garlic. I would definitely make this again after my minor tweaking. It was super quick and easy!

I used ground turkey instead of the ground beef, and chipotle flavored salsa...it was super yummy. Even my roommate who doesn't like beans had seconds! It's even better the next day once the flavors have mellowed.

'Cake' part was good, but apples could have used something other than just Cinnamon. Seemed to taste bitter...not a hit.

The shrimp turned out tender, full of flavor and not one piece was left! I thought it could use a little more salt, but overall, very tasty!

Every time I make this salad I'm asked for the recipe! I like using penne or farfalle instead of macaroni. I also use green olives instead of black, roasted red peppers instead of bell peppers and I add some sliced pepperoncinis. It's always a hit!!!
