If one reads the author’s recipe description, then I would not change a thing. It was delicious, the meat just fell off the bones and the sauce complemented perfectly the rice I had on the side. I could understand that if you were expecting a thick BBQ sauce as the end result, some may have been disappointed. I actually used St Louis Style pork ribs. Having the other half with my wife tonight and can’t stop thinking of how good it will be!

Great as is! I made this on a whim and definitely did not have any leftovers. The amount of tweaking is limited only to your imagination. I would personally add some pepper flakes to add a little heat.

Grandma's Famous Salmon Cakes

I love most fish or seafood cakes and the simplicity of this recipe has made this one of my quick backup meals. I have not found that one needs to modify the recipe except for one step: refrigerate the cakes once shaped for 20-30 minutes. It will prevent the cakes from breaking up during cooking.

Grilled Chicken Salad with Seasonal Fruit

Great and quick to make! The dressing is very good but obviously the source of most of the calories as for most salads. That being said, it was great as is. I used raspberries but will experiment with other options.

Curried Zucchini Soup

Insanely easy and quick to make. I didn't give it 5 starts because I thought it needed a little something to make it a little thicker (as per other reviews). Other than that, it will be in my backpocket when I am in a pinch!

Cream Corn Like No Other

Slam dunk! How often can you get such a good side dish with 5 minutes preparation time?! I decided to do the recipe as is and concur with other reviewers that it doesn’t need any tweaking. I know this is suppose to make 8 portions (of about 1/2 a cup), but only about 2/3 of that actually made it to the plates; the cook got hungry.

Refried Beans Without the Refry

Yum! I did not change a thing. Talk about walking into the house to an awesome aroma. I am used to buying the canned stuff and this is as good if not better. I actually left half the batch as is, and mashed the other half. These freeze very well. So, in a pinch, I always have some on hand. The recipe makes about 12 cups. This is definitely a keeper.

I had some haddock that I was going use for some Fish and Chips, and found this recipe. This actually was pretty good. Haddock does have a slight fishy smell that still did come out with this recipe. However, the spiciness and tanginess of the sauce did it a great service. I will definitely make it again but might substitute with cod or tilapia.

Bacon Wrapped Pork Medallions

Wow! Made it yesterday and will put this on my rotation. The only thing that I modified was just using regular salt as opposed to seasoned salt. The pork can out juicy and nicely seasoned. Since I like my pork still a little pink I cooked for 17 minutes after having cooked the medallions for four minutes per side as per the recipe. Thanks for the recipe! My family loved it!

Curried Chicken Salad

After making this once, I will never pay for pre-made salad in a store! This was awesome as it is. Modifications will be a matter of personal choice, but I would second letting the salad sit for a while for the flavor to really build up. I tasted it when made immediately and then after an hour. Wow! The flavor just gets better. I will probable scale back the mayo a little but not much. I think subbing dried currants instead of the grapes would be a nice option.

Fantastic!!! My wife is not really even fond of BBQ. Well she said this recipe was a keeper! I took heavily in consideration the two “Most Helpful” reviews. First I used Sweet Baby Ray’s Original BBQ sauce. I can see that a subpar sauce would really mangle this recipe. As per the suggestion, I used fresh chicken breasts, used the same other ingredients as per the recipe and added 1 cup of diced onions. Cooked for three hours on high, shredded the chicken and then put on low for one hour. Wow! This will definitely be on rotation. Oh and my picky three year old loooooooved it! Enjoy and thanks for the recipe!

Creamy Smoked Salmon Pasta

Great recipe and so quick to do! My wife, who is not a fan of “slap it all together” food, actually asked me how hard it was to do since she would like to make it again. The changes I made are very simple: reduced butter to 4 tablespoons, all fresh veggies, and could not help myself to up the calorie count by adding two crumbled pieces of bacon at the last step with the salmon (yumm!!!).
