Really watch out for this dish if you aren't a big fan of corn. Seeing as corn is a major ingredient and my husband doesn't like corn, he wasn't a huge fan. I'm not a big fan of quesadillas and I LOVED this dish.

Catherine's Spicy Chicken Soup

So good! I doubled the amount of diced tomatoes and just left out the whole. To make it easier, I cut the chicken up first and boiled it along with everything else. You don't have to wait as long for it to cook this way.

This takes a little bit longer than any other way to cook bacon, but it works to get bacon the exact way you want it. Wonderful.

Really great. Best when you slice the tomatoes really thin, otherwise, they tend to overpower the rest of the flavors in the sandwich. It all depends on how much you like tomatoes.

Chunky Bacon and Potato Soup

As with all chowder-like dishes, bacon is best when it is very crunchy. To make it easy, I used onion in place of the leek. I also used my own potatoes and cut them into small cubes. Worked great!

Savory Chicken Breasts

Make sure to really use the appropriate amount of everything. I halved the chicken and everything but the soup (didn't want to waist). There was too much soup and not enough bread crumbs to make up for it. Had to bake longer because of this, too. Still, really good!
