I think this recipe is great, and I made it exactly as posted the first time, but I revised it a little my second time around and ended up liking it better. I used sharp cheddar cut off of a block instead of mozzarella because I find that you can taste it more, I dipped the chicken in olive oil after I had rolled it, instead of butter to make it a little healthier, I used whole wheat italian bread crumbs which have a great flavor to them. I saved the best ingredient for last: after I dipped them in the olive oil, and before I breaded them, I sprinkled both sides of the chicken with Adobo seasoning. Just that sprinkling gave it such an amazingly different flavor and I highly recommend trying it for yourself. I hope this helps someone. Enjoy!!!

These burgers have an amazing flavor!!! I made them as sliders the first time and they turned out great, the only downfall was that the buns got hard quickly so the leftovers didn't taste as good. About a week ago I decided to see if the same recipe would work for regular hamburgers, and it surely did! I used probably about 3/4lb of ground beef and created the mixture by using low fat mayo instead of regular. I also didn't use the entire packet of onion soup mix because I was afraid of overdoing it. After making the mixture I made two patties and put them in the oven in a 8x8 pan with foil over top of them for the same time directed by the recipe. There was a ton of juices in the bottom of the pan which showed me how much the slider buns soak up. The burgers tasted great to me and my husband complimented me on them. I think they could have been a little more flavorful so I'm going to use more (probably all) of the onion soup mix next time around and I'm going to continue cooking them in the oven without rolls so I can get the least amount of fat per serving that is possible.

I made this exactly as the recipe said. The only difference was that my pork loin only weighed about 1.2 pounds. The flavor and smell were absolutely amazing and my husband loved it!

Blueberry Cornmeal Muffins

Great muffins, very simple and easy to make. I changed the recipe by using 3/4 all-purpose flour and 3/4 whole wheat flour, I eliminated the butter and used a 4 oz motts applesauce cup (sweetened, since that's all I had), and I doubled the blueberries. I think I only got 10 nice-sized muffins out of the batter, but that's fine since it's only my husband and I; I know there won't be any waste since my husband liked them a lot too!
