Let me tell you something ... this is by far the BEST recipe I have ever tried!! I added a twist though, using Alfredo sauce instead of the traditional red sauce. OMG! My wife went ballistic and made me promise to make this many more times! I also graded some fresh Pecorino to the recipe, and that made the difference when I browned the chicken. YUMMY!!
I was tasked with bringing a potato dish to a family Christmas dinner, one that would go with ham. After researching the many potato recipes on this site, I chose this one; the shredded pepper jack cheese caught my attention. However, I did tone the spices down, omitting the red pepper flakes, as a few of the family cannot eat spicy foods. But I did add crumbled bacon to the mix and substituted freshly cut green onions as a final topping. What a hit this was! The casserole dish was emptied, which speaks volumes by our extended family!
Best recipe for this dish I've EVER tasted! To add a tiny bit of additional flavor, increase the pork to 1/2 pound!
Incredible easy to make and so full of flavor! Looks like tater tots will be bought more often in this household! The next time I make it my wife asked if I would crunch up fritos as a topping once the casserole is done.
Didn't particularly care for this. Marinade was just too sweet.

OMG!! There's a restaurant in our area that serves this bacon with their Sunday brunch. This is served as a standard feature with their Bloody Mary bar option (along with jumbo shrimp) that is to die for. Yes, both treats come with their Bloody Mary. But this bacon is soooo good!
