Chicken, Fennel and Mushroom Soup
This is a great way to enjoy a high protein and low carbohydrate meal. My friends at work can verify this as a very yummy soup! They all came at my lunch with their soup spoons poised and none went away without smacking their lips. Enjoy! Infuse alcohol with frozen blueberries and make a delicious blueberry liquor that makes a wonderful gift. It's best to use frozen berries rather than fresh ones due to the organic breakdown that occurs when the fruit is frozen.
This is an easy way to make cordial and it's good for gifts! Other berries such as raspberries, strawberries or blueberries may be used in place of blackberries, and rum or brandy may be used in place of the vodka.
Cranberry Oat Bars
These little bars are great to snack on, are perfect at holiday time, and would be excellent for a cookie exchange. If you have leftover dough after forming the bars, don't worry, I find that the thinner the crust, the better.
