Salmon Croquette Burgers
These salmon croquette patties are great with or without buns. As a kid I remember watching my mother make these. I have altered it quite a bit to make it my own. My husband and his family loves them so I decided to share. Jalapeno can be added to the sauce for those who choose. This option works well for guest who can not eat spicy foods.

This is the most incredible recipe for apple-stuffed acorn squash. I make it every Thanksgiving.
Spaghetti Squash Primavera
This spaghetti squash primavera is my version of a recipe that came with my weekly produce basket, which contained several of the ingredients used in the recipe. I made a few changes to suit my tastes, and the results were delicious! It makes a great vegetarian main course or a nice accompaniment to a meat entrée.
Herb, Garlic and Bacon Pork Loin
This roasted pork loin with bacon, garlic, pearl onions, and lots of herbs is super flavorful. Serve with potatoes or any of your favorite veggies for a meal the whole family will love.
Colorado Green Chili (Chile Verde)
My version of my mother's green chili. I like to serve it over oven-baked burritos or with beans and rice. If you can't find a chile roaster, look for frozen diced chiles at your supermarket. You can also freeze fresh roasted chiles for off-season use.
A simple soy sauce and brown sugar marinade, with hints of lemon and garlic, are the perfect salty-sweet complement to rich salmon fillets.
