Yummy! My hubby RAVED about these!!! Just make sure to eat them in first couple of days after baking, otherwise they get rock hard, fast! Regardless, this is my new choc chip cookie recipe!

Oven Barbecued Beef Brisket I

Frankly, I was disappointed by this recipe. I was expecting a savory, melt-in-your-mouth, too-falling-apart-to-cut dish, and ended up with a good-tasting, but rather tough hunk of meat. I followed recipe directions exactly, with the exception of adding a BBQ rub before cooking. I'm still looking for a good brisket recipe, as this is NOT it.

Southern Ham and Brown Beans

My hubby raved about this one, he's a big "southern cookin'" fan. :) One thing to note, MAKE SURE you don't keep the pot covered when it is simmering for the 3 hours. I checked on mine about halfway though, and all the liquid had dried up, and the beans were scorching on the bottom of the pot. Thankfully I caught it in time, before anything was burnt too badly, added water, more chili powder and salt and pepper to the mix, and it came out fine in the end. I didn't even notice any extra "smoke" in the taste. ;)

Cabbage Jambalaya

YUM! This is the best Jambalayah recipe I've found! My hubby loved it. I did make a few probably unorthodox changes, I was trying to figure out something to do with the "spiced cabbage water" that was left over after having cooked a corned beef a few nights earlier, since my hubby won't eat cabbage by itself. I used this as the base for the Jambalayah, and it came out WOW! I also used Italian Sausage instead of smoked, gave it a little extra kick, and added a bit more spices to perk it up a bit, I also left out the celery and added green peppers. I am definately going to try this one again. (Maybe after next time I do corned beef!) LOL...

Is easy, but it is too sweet. I do like the fact that it doesn't include any eggs in the recipe. Don't know if I'll try it again, but if I do, I'll use much less honey.

Santa Fe Enchiladas

Bland. I did omit the green chiles because I didn't have any on hand. This may have made the difference. So if there's a next time, I'll be adding some fajita spice, and probably using diced tomatoes with chilis, as I'm not much of a tomato paste lover anyway. The microwave approach was different, I've never made an entire dish in the microwave before. From that vantage, it came out better than expected.

Baked Spaghetti with Chicken

I did not care for this recipe. The chicken by itself would've been good, but the baked pasta was dry and just blah. I also thought the broccoli just didn't blend well tastewise at all. Won't be making this one again.
