Added sliced mushrooms (instead of red pepper) and a whole onions. Reduced salsa by half a cup and added chicken broth.
Coated chicken cubes with chili powder. Added onion and green pepper when browning chicken. Added black beans when chicken was cooked. Added corn to boiling mixture, before rice.
Marinated all day. Delicious. Served with garlic pasta recipe.
Reduced chili flakes to 1 tsp. Added 2 tbsp butter to garlic herb mixture. Added quarter cup of pasta water to bowl as pasta sat for 5 minutes. Used dried oregano 1tsp. Served with extra parmesan cheese at table.
