White Chocolate Cherry Vanilla Yogurt Quick Bread
I was looking for a muffin or quick bread recipe that called for yogurt but all were a bit too healthy for me so I dreamed this up. But at least I kept the oats! I am sure this batter could be used to make muffins too. A streusal topping or powdered sugar glaze would be extra naughty and extra good too but I didn't want to be too naughty.
White bread corn pudding
My sister gave me this recipe. It is easy to make you can make it as bad for you (use white bread and cream!) or good for you (whole grain bread, soy milk, nonfat milk, or nonfat sour cream, and reduce whole egss to two and use two egg whites, and half the butter).
Cheese and Olive Spread
This is a recipe mother in law sent to me (along with my husband's favorite meat loaf recipe). Very tasty and easy to prepare I guarantee the bowl will be almost clean after you serve it. It is best to refrigerate for about 6 hours or overnight. Take it out about 20 minutes before serving. It is also best served on Ritz crackers.
bread using cottage cheese
This is kinda close maybe? You could always substitute dried cranberries for the raisins, add nuts and marmalade maybe?
Three milks coconut custard
I needed to use up some milk and eggs one day and came up with this custard. I tried replacing the almond extract with amaretto liquor and it was mighty good too. You can adjust the flavorings to suit your taste but don't go over board on the almond - it is a pretty strong flavoring. And don't skip the water bath!
Chocolate pumpkin cheese cake
I came up with this one when I had some left over pumpkin and cream cheese. The texture is very creamy and it is good with or without the chocolate sauce. I like mine spicy so I am generous with the pumpkin pie spice so go for 2 tsp. if you like yours a bit more mellow.
This is a good base to create your own breakfast smoothie in the morning or whenever you need a "pick me up." Using pasturized egg substitute allows you to drink this without cooking it first. I often add a tablespoon of unsweetened cocoa or sugar-free jello pudding to the mix instead of fruit. Get creative with flavor combinations and have fun!
This is a dish my sister makes for special occasions. It is not too sweet and very rich and creamy. If you like a sweeter dish, double the sugar. This makes for a lovely presentation that looks like you went to a lot of effort but didn’t.
Doughnut bread pudding
Don’t pass up those day-old doughnuts in the grocery store. They make great bread pudding! Just about any kind of raised yeast doughnuts work except for jelly. Apple fritters are even good. I sometimes use a combination of cinnamon, glazed, sugared doughnuts and apple fritters for an interesting combination. You don’t have to add any extra fat and very little (if any) extra sugar depending on taste. This recipe can easily be doubled but be sure to use a larger baking dish OK? Your baking time may increase by about 15 minutes too if you double it.
