Basic Egg Salad for 1

Put hard-boiled, peeled eggs in a small bowl. Using a knife, slice eggs in every direction and keep doing this until the egg is coarsely chopped.

Add half of the mayonnaise, mustard, onion and seasoning salt and mix well. If the mixture is the desired consistency and flavor, do not add any more. Otherwise, add the other half of the ingredients to taste and mix well again.

Serve warm or chilled on whole wheat bread with lettuce.
