This is something that my Mom always made and served while the egg salad was still slightly warm. It's great on wheat bread with lettuce. Very basic, but very delicious. And I always have the ingredients on-hand.

  • Put hard-boiled, peeled eggs in a small bowl. Using a knife, slice eggs in every direction and keep doing this until the egg is coarsely chopped.

  • Add half of the mayonnaise, mustard, onion and seasoning salt and mix well. If the mixture is the desired consistency and flavor, do not add any more. Otherwise, add the other half of the ingredients to taste and mix well again.

  • Serve warm or chilled on whole wheat bread with lettuce.

Tips

*yellow mustard will work fine, as will the white parts of green onions if you do not have a white or yellow onion on hand.
