Cakelike pumpkin pie filling with no crust in fun, snack-sized squares!
Pumpkin Bread I
This is recipe that I modified several years ago to lower the calories and fat. Also, by using 3 medium loaf pans instead of one regular loaf pan, the bread is eaten before it dries out. I freeze the other two loaves.

Cinnamon Belgian Waffles
I tried several Belgian waffle recipes after getting my waffle iron. In the end, I combined my favorite with my husband's favorite to come up with this recipe.
Belgian Waffles with Bacon
I like the flavor combo of savory and sweet with these waffles. This recipe is for a belgian waffle, but I'm sure could be used in a regular waffle maker as well. I adapted this from the Cinnamon Belgian Waffle recipe on here that another user posted.
Cold Asparagus with Curry Dip
A delicious creamy dip for cold or hot asparagus or even artichokes. It is also excellent on potatoes and other veggies.
Awesome Slow Cooker Pot Roast
Tender slow cooker pot roast simmers in a cream of mushroom soup gravy.

Toddler Muffins
Mini muffins for finicky toddlers with the addition of fruit and veggies. My son is 2 and has been eating these for a year. I always keep a supply in the freezer, he loves them frozen especially when new teeth are coming in! Adults love them too. Great for play groups! Recipe makes 24 mini muffins or 12 regular-size muffins.
Slow Cooker Pulled Pork
Using root beer to season slow-cooked pork tenderloin makes a tasty meal.
Slow Cooker Pot Roast
A quick and easy-to-assemble meal of tender beef with onions and carrots.
Slow-Cooker Fish Chowder
A great, hearty fish chowder that's lower in fat. Perfect for a winter's day. This recipe is very versatile. I use low-sodium, homemade stock and I find there's enough salt from the bacon that no more is needed. You can change up the seafood, the vegetables, and the seasonings. I find seafood chowder difficult to reheat (a no-no at work!) so I would make this when I have company coming who can finish it in 1 or 2 days.
