I made as directed, including the chocolate chips (in my opinion, chocolate is never optional), but I cut all the ingredients in half since I was trying to use up some leftover pumpkin and only had one cup. Instead of muffins, I poured it all in a large loaf pan and made bread instead. Since I didn't have a bake time, I just kept an eye on it. It was wonderful! Coffee flavor was subtle but added a nice depth with the chocolate. A keeper for sure!
A good starter recipe. This was my first attempt at fried rice but I used a lot of the changes from reviewers (using frozen vegetables and using cold, leftover rice). My family really enjoyed it and it was a quick dish to prepare with the changes. My younger son, who doesn't normally like Asian flavors said he was surprised at how much he liked the rice. I will keep the modifications and make it again!
This was super good but double frying was definitely a must to get the chicken crispy. I tweaked the recipe just a little to use what I had in my pantry (red pepper flakes instead of the whole dried chili peppers and peanut butter for peanut oil). The sauce was fantastic. The double frying took longer for me than indicated in the recipe but well worth the extra effort and time. I would be OK just using sauteed chicken with the yummy sauce but the rest of my family really liked the chicken fried. They gave it rave reviews!
I used pork loin chops instead of chicken since they were on sale at my grocery store this week. They were thin enough that I didn't have to pound I didn't have chipotle chili powder so I used 1/4 tsp of regular chili powder, 1/4 tsp of cayenne pepper and a dash of cumin. The gravy turned out wonderful and my husband and son raved about it. The best part was it was so fast and easy to make. A definite keeper!
My guys love boxed mac and cheese but I think it's disgusting. This was my first attempt to compromise. Turned out great! They thought I slaved over it but it was super easy. I used half sharp cheddar and half smoked Gouda. Will make again for sure.

I made this as directed with two additions. I added mushrooms with the sausage and Parmesan cheese with the ricotta. Excellent meal!

These were really yummy! We eat a lot of ground venison at our house and meatballs are usually dry but the ricotta made a huge difference. I did add some Parmesan and I baked instead of fried them but otherwise followed the recipe. Will make again.
Great crust. I did pre-bake with the sauce before topping to get a crispy bottom. Excellent recipe.
Really excellent recipe. I didn't need the full 4 cups of milk so would suggest adding it little by little until the gravy is the right consistency. My whole family loved it.
