Chilled Cantaloupe Soup

Did not care for this. It smelled good but the consistency we didn't care for. Also, we didn't find it to be sweet enough. I am sure you could add some sugar to remedy this. It was easy to make however, just not for us.

Honeydew Blueberry Soup

Very, very easy. Very, very good. I could not believe this only had three ingredients. I had my honeydew chilled in the fridge before I cut it up so this cut some of the chilling time down. Also, I tried without the oatmeal cookie and while it was very good, the cookie added a little something extra. Plan to try it with an iced oatmeal cookie in a few minutes to see how that goes. Everyone loved this and I will be making many more times. Also, I took one cookie and shredded it instead of crumbling and it absorbed the moisture too much. Make them big crumbles.

Chilled Strawberry Soup

Absolutely wow!!!!! I cannot believe people did not like this. I have been back into the soup turine five times since making this one and a half hours ago. My kids have each had two servings and this was because they couldn't wait until dinner. I decided to add ground cinnamon because it took the flavors to another level (I have a great strawberry bread recipe that has a lot of cinnamon in it and I was basing my decision to add on that recipe). Anyhow, the cinnamon adds a nice bit of color as well and doesn't make it as pink. Try this recipe and fall in love with it. It makes such an ample amount. I did go ahead an increase the sugar as well but did it to taste.

This was different. I don't think I will make it again. Looked pretty. Liked the dressing but something was lacking.

Tuscan Soup

Wow. Wow. Wow. What an easy recipe with such a sophistacted taste! My husband and I loved this. Cannot wait to make it for company. I also think it would be a terrific fall or cold weather dish. Used mild Italian sausage and five pieces total. Had two cans of chicken broth (reduced sodium) so I just added a can of water and two bouillon cubes. Can't wait to see what this is going to taste like tomorrow.

Brie and Cranberry Pizza

I used jellied cranberry sauce instead of whole because that was all that I had. I think next time I will make the effort to get the whole variety or try raspberry preserves instead. The sauce didn't melt and looked clumpy. I would also add more pecans. My husband liked this more than me and has had three pieces tonight. The tart taste of the cranberry sauce cut through the thick creaminess of the brie quite nicely.

Cold Cherry Soup

This was very nice and very similar to the chilled strawberry soup in taste. I used dark sweet cherries (only kind that the store had) and added a bit more sugar during the boiling stage. Also instead of folding in the whole cherries after the sour cream, I poured everything into a food processor and pureed it all. Added a little heavy whipping cream to make it a bit smoother. Would make it again.

Spinach Salad with Peaches and Pecans

Terrific recipe. Great tasting and super quick. I also make a variation of this using strawberries and pink grapefruit sections, everything else is the same. The color of the peaches against the spinach was beautiful.

Grilled Teriyaki Tuna

Perhaps I didn't marinate as long as needed but the flavor wasn't there on this and I was disappointed. Also my husband overcooked the ahi tuna -- do not overcook.

Liked this better than another recipe I tried the same night. Used a mixture of green and black crushed peppercorns. Husband overcooked the fish; still edible but not as enjoyable.

Spinach and Strawberry Salad

Give me more, give me more. My family went nuts over this. Next time I am going to cut the sugar down a bit because my husband and I thought it was too sweet. The kids said keep it the way it was. Finally a way to get my daughter to eat spinach! She even wanted to take this in her lunch this morning. Think I am going to make it again tonight because it was so well received.

Red, White and Blue Slaw Salad

My husband liked this but thought it was a bit salty. I thought it was OK but may try a mixture of bacon and pecans next time. I used ready made bacon bits and it had that kind of flavor as opposed to "hot out of the pan, just fried bacon." Will try it again.
