Penne and Vodka Sauce

Made this for our best friend's wedding anniversary celebration and it was beyond fabulous. They, along with my family, are asking for this dish constantly, even the picky kids liked it. Had a little trouble finding the pancetta but was successful in the end. Also used Gray Goose vokda. Superb! Easy! You can't get any better than this. I also served with it a warm goat cheese salad, fresh French bread and chocolate Grand Marnier creme brulee.

Pasta with Scallops, Zucchini, and Tomatoes

Made this last night and husband loved it! We are having company tonight and I am making it again! I didn't have fresh basil and forgot to put it in until almost before serving. Tasted just fine. Also, I added ground cayenne because my pepper flakes didn't smell as fresh as they should have been. It was spicy; salt content and flavor were on the mark. Used a small can of diced tomatoes also. The easiness and quickness of this dish is unbelievable. Try it.

Blue Cheese Beef Tenderloin

I am always looking for new ways to prepare beef tenderloiin. The sauce was incredible and I have also used it on grilled ribeyes. The second time I made the sauce, it was a bit salty but that was due to the brand of blue cheese. I always serve the sauce on the side. Tremendous flavor.

Bacon and Cheddar Stuffed Mushrooms

I would definitely make these again. The first time around I added fresh garlic but I felt it was overpowering the other flavors so next time I would delete all together or just put in an extremely small amount. Also, I used ready cooked bacon and couldn't get the pieces small enough. Next time I will try bacon bits which I think would bind better with the flavors. Also will try sharp chedder because I think it needs that little extra kick.

Annie's Fruit Salsa and Cinnamon Chips

I really liked this but found that it did get a bit soupy later in the night. Used blackberry preserves. Kids liked it but enjoyed the chips more. Made more of those the same afternoon because first batch was almost gone before our potluck.

Pecan Dijon Chicken

What a terrific recipe! Made this last night for my husband and he loved it. Said it would be perfect to serve when people come over. I pounded my chicken breasts first because they were kind of thick and had to increase the initial cooking time to 20-25 minutes because at 10 minutes, it was still very raw. My picky daughter liked the chicken but without the nuts. She just doesn't like nutes period. Served over brown rice and with a granny smith apple/spinach/candied pecan salad. Again, very, very good. I love this site and everything I have prepared has received countless compliments.

Gourmet Chicken Sandwich

Delicious! Everyone loved this and I cannot wait to make it again. I didn't have any focaccia bread available so I used refrigerated crescent roll dough (two triangles together to look like a square) to make the bread portion. I sprinkled powdered garlic and dried rosemary on top. I think this would be great for a gourmet picnic or served alongside a pasta salad. Thank you!

Blackberry Spinach Salad

This was an interesting dish and something nice to serve. My husband liked it very much. Used balsamic vinegar.

Delicious. My husband was afraid that the mustard sauce wouldn't go but it turned out to be very, very nice. Kids loved it as well.

Ginger Glazed Mahi Mahi

This was fabulous!!!! I am still thinking about it four days later. Even my kids and husband who do not like fish, loved this dish. I used crystallized ginger instead of fresh and it turned out perfect. Served with a sauteed mixture of green beans, sugar snap peas and mushrooms. Placed the mahi mahi on top of the veggies. Also used the frozen mahi mahi available at Sams Club.

Andouille and Chicken Creole Pasta

Would not make this again. No one cared for this and ended up throwing it away. Too much preparation and time involved to yield such an unappealing dish.

Slow Cooker Chicken with Mushroom Wine Sauce

It was OK but nothing special or interesting. Will not make this again. The color was so bland as was the taste. Soupy taste despite the addition of other things to make it better tasting.
