Viva Madrid Spanish Chicken

This recipe was incredibly easy - I didn't have either bacon or dates, so it's hard to even say I made the recipe. Added a little extra olive oil to make up for the missing bacon fat, and added raisins and chopped peppers to the pan. It was still delicious and much healthier. Next time I'll probably just use one strip of bacon, it certainly doesn't need all 6 if you're concerned about the fat or cholesterol content.

I used butter instead of shortening, and regular flour + baking powder. Nice, fluffy biscuits.

This recipe was okay, but lacked something...even doubling the spices I thought it was quite bland. I'l probably make it again, but bump up the cumin and cinnamon to 1/2 tsp, and add some red wine and salt to the mix. I dredged the chicken in flour before browning, and after reading reviews of undercooked rice, I used 1c of rice and 1 3/4c chicken stock, omitting the boullion and water.

Awesome meal. Super easy - it was finished in 40 minutes even with three young, tired kids in and out of the kitchen and every single person in the house liked it! That doesn't happen often.

Very good and a perfect weeknight option - it wasn't as complex as I would have liked, but that was more than compensated for by how fast and easy it was to make.

Spinach Enchiladas Verde

I was a bit skeptical of this recipe, but it was so much better than I expected! I used lowfat plain yogurt in place of sour cream. I wanted something a little more substantial than spinach and cheese, so I also added white beans to the mix. I used red salsa as that's what I had on hand - I thought that with the spinach might ruin it but it was great. I will say - I didn't even try to feed this to my picky preschoolers. They got quesadillas.

Grilled Lemon Chicken

easy and delicious. I marinated it for about 2 hours; I can't imagine 20 minutes would have been enough. Too tangy for my picky preschoolers though - next time I'll reserve some chicken to cook without the marinade for them.
