Cheese Lover's Chicken

It was very good. I ended up making 5 pieces of chicken breast and a vegetable soup out of it. I first sauteed some onion with a lot of galic in a pot. Then I added 1.5 can of large tomato sauce and 0.5 can of tomato paste, sugar and the dried spices like it calls for. In the meanwhile, I coated my Tyson fozen chicken breast( the thin kind) with bread crumb and galic pepper, and browned on very high heat on a oven ready pan. I layered the cheese and poured 1/2 of the sauce over them. The chicken was baked for 30 minutes on 420 degree. While the chicken was cooking, I pour 2 cans of vegetable broth to the rest of "sauce" in the pot and added bay leaves, 1 bag of fozen vegetable mix, and 3 cups of celery. I let the soup simmered for 15 minutes and it was done. The chicken was close to done at that time. So I added the rest of cheese on top of it. Both the soup and the chicken just turned out great.

It was a hit everytime I made it. Getting the coleslaw mix from Costco or Sam's Club will save you a lot of chopping time.

Chicken Florentine Casserole

I made this recipe with 6 pieces of chicken breast, 8 ounces of mushroom, 3 cups of mozzarella cheese in 3qt dish. I didn't have bacon bits, but I did have some pork belly. So I put the pork on the top of the chicken breast to bake at the beginning. It was really good. I had one chicken breast with the sauce left. So I sliced it up the next day, also sliced up two portbella mushroom, and added 1/4 half and half, to make florentine sauce to serve over fettuccini for me and my hubby. It was excellent.

I have made this recipe twice already. Both turned out great, way better than the ice cream in the store. Here is the measurement that I used for a 2-quart ice cream maker: 3 eggs, 1 3/4 cup sugar, 2.5 to 2.45 cups pureed peaches (2.45 cups will give more fresh fruit favor but 2.5 would do ), 2 cup heavry cream, 1 cup half /half cream ( the 2nd time I used 2% fat milk, it still tasted good but less creamy ), 1 teaspoon vanallia extract, 1/4 teaspoon salt,

Italian Sausage Soup

Like other reviewers has said, it is a good basic minestrone recipe. I like to dress mine up with ditalini pasta, and freshly grated parmesan and chopped parsley at the end. Also, a good can of tomatoes goes a long way here. I use ( and always use) a can of Nana San Marzano tomato which I bought it from Costco.
