Banana Oat Muffins with Sour Cream

I made these today and hubby said they were the best yet. I followed the recipe exactly and used 3 bananas which made quite a difference. These muffins were a little too sweet for my taste so I will make them again but with less sugar--maybe half white and half brown sugars. Didn't have walnuts and didn't make the topping. They were moist and delicious.

Leftover Chicken Croquettes

Made this for dinner tonight. Used dried parsley because I didn't have fresh, and used Panko bread crumbs. Hubby and I thought this recipe was worth making again. I think I will add some chopped bell pepper and a little garlic next time. Good use of leftover chicken!

Polish Meat and Potatoes

I have made this recipe several times and my husband and I really like it. I do use less oil and we like smoked chicken sausage for the meat. I made it for potluck once and there were no leftovers! This is definitely on the "make again" list.

Beef and Noodle Bake

I made this recipe for dinner tonight and my husband and I both liked it very much. I only had half a pound of hamburger but I did use 2 cups of macaroni so it did make quite a bit. I shared some with our next-door neighbor. I plan to make this dish for our next potluck and I'm sure it will be enjoyed.

Frosty Strawberry Squares

I made this recipe for a potluck dinner we were going to two days later. I had to taste it to make sure it was ok for them but after that, I decided to make something else and keep this for us. It was so delicious and easy to make. I did decide to chop the strawberries instead of slicing them but I followed the recipe otherwise. I would also like a thicker crust--it was so tasty! I will definitely make this again.

Allie's Awesome Easy Spice Cake

I have made this recipe twice--once for my husband, and once for our male neighbor, both really fond of spice cake. I made it both times as instructed, and both times it came out very nicely. I was surprised since we are at a higher altitude, but after baking for only 55 minutes, it was fine. Both men were very pleased with the cake, so it is a keeper in our family.

Mama's Best Broiled Tomato Sandwich

My husband is usually picky about Italian flavors but he did like this one. I fixed it exactly as published and we really enjoyed the mix of flavors. Definitely going to fix again.

Cheddar Biscuits

I made these biscuits tonight so I could use up my baking mix. They turned out really great. I didn't have garlic salt so I used only the garlic powder and parsley in the melted butter. I made them kind of small instead of regular biscuit size. It was hard to not eat too many. My husband really liked them and I will definitely make these biscuits again.

Mini Meatloaves

I have tried several meatloaf recipes on this site and find each very similar but good. I made this last night and my husband really liked it. Very easy to prepare. I did add some chopped onion and some pepper--personal preference. Instead of the mini loaves, I made one large loaf and cooked it for about 50 minutes which worked out just fine. I did think that the glaze was a little too much and a little too sweet.

Classic Goulash

I have made this recipe several times since I first saw it. I believe my mom made something similar (I'm 71 yo so it's hard to remember!). Since I was making it for only two of us, I used the same ingredients except I used only 1 lb. of ground beef and and adjusted the other ingredients accordingly. I added chopped green pepper, and used worchestershire sauce instead of soy sauce. It made a lot so I froze some for future eating. My husband really liked it and I liked it as well. Very easy dish to make. Good on the budget too. UPDATE: 2/25/2017 I made this using the whole amount of ingredients and it made enough for me to freeze three meals' worth and share a large meal with our neighbor. My husband says I can make this all the time as far as he is concerned!

Ground Beef Curly Noodle

My husband recently had some teeth pulled so he can only chew soft foods for the time being. I tried this recipe this evening and followed it mostly, with just some adjustments for our individual tastes. I used garlic flavored diced tomatoes and a couple of handsful of frozen corn as well as the pound of ground beef. Of course I had to add a little water to make up for the fluid missing by not using canned corn. I only used one package of the noodles since I thought it would be enough for the two of us. This made a good amount of food for just the two of us so we have more than enough for leftovers. My husband had no trouble eating this dish and he really enjoyed the mix of flavors. This is definitely a dish I will be making in the future.

Pineapple Angel Food Cake

I made this today and the taste was very good. I'm not sure what I did wrong but when I removed it from the oven, it was lofty and while it was cooling, it sank. Not a pretty sight but it didn't affect the taste. I would make this again and maybe bake it in a tube pan or a bundt pan with hopefully better results.
