Italian Breaded Pork Chops

What a great way to prepare pork chops! My boyfriend, who usually hates pork because he thinks it is dry, liked these and devoured the leftovers the next day. I made a half recipe and only change I made was to substitute some of the Italian bread crumbs with panko. Highly recommend.

These are fantastic muffins! Great texture and flavor. I've made them twice in one week already. I substituted frozen blueberries for the raisins and added some chopped pecans. Also used half whole-wheat and half unbleached white flour.

Sesame Noodles

This was a terrific weeknight dinner! I used whole-wheat linguine. I also doubled the sauce and tossed the pasta with grilled teriyaki chicken tenders and steamed broccoli.

Orzo with Parmesan and Basil

Made this for dinner last night to accompany grilled chicken thighs and a mixed-green salad. It was delicious! Very flavorful. I did add a splash or two of light cream to the cooked orzo because the pasta soaked up all the chicken broth -- but this gave the dish a nice creaminess. My boyfriend, who usually doesn't care for orzo, liked it prepared this way. I think next time I will add some pine nuts to the dish.

Absolutely Fabulous Greek/House Dressing

I liked this dressing a lot -- and thought my Greek salad of romaine, plum tomatoes, cucumber, red onion, and feta was delicious -- but my boyfriend found the dressing too sharp. I definitely will make this again, but I probably will use less vinegar next time.

Grill Master Chicken Wings

These were excellent and easy to prepare. Instead of chicken wings, I used chicken drumsticks to feed a crowd. Got many compliments on the sauce -- I used Frank's hot sauce as recommended with a few dashes of Trader Joe's jalapeno pepper hot sauce. You will not be disappointed if you make this recipe.

Best Turkey Burgers

Great recipe for turkey burgers. Made a batch for a beach BBQ and was complimented on how flavorful and moist these were. We topped them with American cheese and served them on whole-wheat buns with all the fixins.

Clams Italiano

This is a fantastic recipe! I usually serve this dish over linguine, but most recently, I cooked the clams and sauce in a large foil pan on the grill and served it with crusty Italian bread as an appetizer. Received many compliments. And you can freeze the leftover sauce for another meal -- just add some fresh clams.

Beefy Baked Ziti

I made a half-recipe of this baked ziti for the 2 of us, and it was delicious. I couldn't stop eating it right from the pan after it came out of the oven. I substituted fresh mozzarella (leftover from another recipe), thinly sliced, for the shredded mozzarella and layered the sliced mozzarella with the sour cream instead of the sliced provolone. Instead, I put the sliced provolone on top with the Parmesan.

This is a great recipe for ribs. The sauce is sooo good, and the cooked ribs fell off the bone. Boyfriend said they were "excellent"!
