Wake-Up Casserole with Canadian Bacon
The original recipe for this casserole with Canadian bacon is delicious, but this is my healthier version with less fat and fewer calories. As a single person, I can't eat eight portions in one sitting, so I wrap portions and freeze them. It's great to have on hand for family visits — just reheat each person's serving when they show up for breakfast. It's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.
