Toast two slices of wheat bread, top with a thick slice of tomato, then a slice of pepperjack cheese. Place under broiler to melt cheese a bit, top with lettuce. Add mayonnaise to top sliceof bread, put sandwich together and enjoy - with that glass of iced tea. Both ways delicious!
I love the idea for the cupcakes. Another good one you young ladies might try is meatballs set in a glass dish of deep red tomato sauce (I'd added red food color). Use carrot or pickle strips for legs, olive slices for eyes. etc. Place them in a long narrow dish with parsley sprigs for trees and bushes. I'm 75 and when my husband was alive, we came up with all kinds of crazy stuff. Friends would drop by just to see what we'd thought up. They really liked our big fat "bugs". Would love to be able to do that stuff again. I think my daughter in Washougal, WA. got the urge.
I just took this out of the oven and had a slice. Despite the drastic change I had to make, it came out surprisingly good. Found out I had no eggs, so had to make an egg substitute with flax seed. I think if I'd beat it on a higher speed it would have been much lighter. Flavor is great, otherwise. It was just a little on the dense side. The 5 is because I know the recipe would have been perfect if I'd used real eggs
I am 76 years old and have eaten this (with many variations) since I was knee-high to a gnat. There ae so many ways you can vary it, and if it doesn't come out "right" it's because you didn't cook your rice right. Just because one person doesn't like a recipe does that make it bad. Food is all according to taste. You know, some like their foods spicy hot, others don't, etc. Adjust it to your taste or miss out on a good recipe!!
