Tiramisu Layer Cake

As a tiramisu CAKE, this was pretty good. The filling was what made it for sure. The second time around I made actual ladyfingers using a recipe from this site, and used the instant coffee in the filling, but made a strong espresso to soak the ladyfingers in. DELICIOUS!

Amazingly Easy Irish Soda Bread

This is the first soda bread recipe i've tried and it was a hit! I followed the directions exactly for the first loaf and everyone raved about how delicious it was. We ate it along with a beef stew recipe from this site and the combo was dynamite. Second loaf I basted every 10/15 min and added raisins i'd soaked for 24 hours in four roses whiskey and that was a hit as well; couldn't taste the alcohol but those raisins were plump and juicy! I'd even go so far as to say it was my favorite because the raisins created sweet and delicious pockets. This recipe is a keeper for sure!

Easy Cabbage Rolls

I made this dish in two separate pans, one with changes and one without. Prior to filling each leaf, I steamed the cabbage to make sure the leaves didn't tear while pulling them apart. The one without changes was good, though a little blander than I would've liked. The second dish, i added garlic into the meat mix, made the rice with beef stock, and added a little tomato sauce into it; I also layered the bottom of the pan with sauerkraut as another used suggested. Even with the changes, the second dish would have been alright, but the sauerkraut added that flavor making it great!

Simple Whole Roasted Chicken

The spices mentioned in this recipe i thought were interesting but very delicious. They did throw some ppl off as they weren't expecting them, but i loved it! This has also become my go-to method for cooking chicken! I mention method because no matter what spices you're using, the way it's cooked makes the chicken incredible. I've just begun turning it onto its back the last 10/15 minutes to brown the breast area before serving it. Everyone who has tried it is very complimentary about how juicy and tender the meat is - I even use this method for cooking my thanksgiving turkey now as well!

This has been my go-to chocolate cake! I follow the recipe exactly and it always turns out amazingly. It tastes just like you'd expect a chocolate cake to taste, with all that wonderful flavor, and SO moist!

My Best Clam Chowder

I’ve made this several times and each time have been complimented that it’s either restaurant quality or better than! It’s so rich, creamy and delicious, it’s a perfect traditional chowder. This will forever be in my cooking queue.
