GF version - 1 1/2 c oat flour, 1/3 c potato starch, 1 tsp xanthan gum. I also added 1/2 tsp cinnamon and 1/2 tsp vanilla.
The only changes I made were using cukes from our garden, using a red onion, and using chopped up dried dill, about a tbsp. It was delicious. Perfect balance of flavors.
I've tried many different recipes for cucumber salad, and this one packs the most flavor. I guess the secret is in boiling the liquid first. Works for us!
Far less sodium and way more flavor than canned. And my kids all eat it.
We have gluten and dairy allergies, so I skipped the heavy cream and used gf flour. This was delicious. Even the kids (9, 9, 7, 5, & 5) gobbled it up. I’ve added it to my saved recipes and printed it. Fantastic.
