Mexican Fruit Cake

An irresistibly sweet, fruity, and delicious cake that's completely different than most you've tasted. The cake is extremely easy to make and has frosting that is out of this world!

Cake:
2 eggs
2 cups flour
2 cups sugar
2 teaspoons baking soda
1 (20 oz.) can crushed pineapple with juice
1 cup pecan pieces
Frosting:
8 oz. cream cheese
2 cups powdered sugar
1 stick butter
1 teaspoon vanilla

Directions

Instructions Checklist

Step 1
Stir together eggs, flour, sugar, baking soda, pineapple, and pecans in bowl, without using a mixer.

Pour into 9 x 13 inch pan. Bake at 350 degrees for 30-35 minutes, or 325 degrees for a glass dish.
Step 3
While allowing cake to cool 10 minutes, cook cream cheese, powdered sugar, butter, and vanilla together in pan over low heat, stirring continuously until sugar and cream cheese are dissolved. Pour over warm cake.
