  • In medium heavy saucepan over med-high heat, melt butter. Add sugar, salt, and milk. Bring to a boil for one minute. Take off heat, quickly stir in oats, peanut butter, and vanilla. Spoon batter onto waxed paper, making cookies desired size. Let cool in a dry place for about an hour, then store in airtight container.

Tips

When I measure the oatmeal, I use slightly less so that my cookies have a moister, less crumbly, more fudgy consistency. If you like a drier, heartier cookie simply experiment with adding more oatmeal. I've heard these also taste great without the peanut butter, but I love PB so in it stays!
