  • Melt butter in medium saucepan over medium heat until bubbly. Add flour and stir for one minute until flour turns pale brown. Add milk and beef base or bouillon. Add mustard. Turn heat to medium high and simmer until sauce thickens enough to coat a spoon (about 1-2 minutes). Take off heat, and add salt and pepper to taste.

Tips

Don't simmer the sauce too long, or it will "break" and become grainy. You can use whichever combination of mustards suits you best--dijon, horseradish, stoneground--but I wouldn't use just yellow, as the flavor will lack complexity. I've never tried honey mustards but that would probably be delicious for ham! Happy experimenting!
