This was AWESOME- definitely a keeper! I didn't have Cayenne pepper so I sub'd red pepper flakes and added broccoli like pictured. I also shave the carrots with a peeler to give it that authentic texture. Much better than take-out and much healthier to boot!

I have horrible luck when baking and even I made great muffins with this recipe. I did use a little less sugar and sub'd 1/2 applesauce with the oil to make them a little healthier. Turned out perfect!

I loved this and so did my husband. I only made a few small changes to fit my taste and what I had on hand. I used fresh spinach which I sauteed with minced garlic and coated the breast in breadcrumbs before I baked. Everyone loved this, in fact my 5 y.o. daughter was mad at me for not making more!

So easy and so good. Use good quality rice and chicken broth instead of water and you cannot fail!
