This is a standard "impress the co-workers" recipe! I use frozen blueberries instead which goes really well! I find the cranberries too sour.

Excellent, rich flavor in a healthy dish! Yes, canned tomatoes are easiest as is cumin powder. Even better the next day. My husband loved this!

Light Oat Bread

This recipe is a fantastic base model. I use olive oil for the fat and then use a combination of whole grain flours to equal 3 cups. I've tried, one cup of all purpose with 2 cups of whole wheat, one cup of all purpose with one cup of whole wheat and one cup of rye, but my favourite is with all purpose and seven grain. I use the light crust setting on the bread machine and it seems to be not so tough on the crust.. a bit softer. Have fun experimenting with the combos!

For an amazing low-carb alternative, put quinoi in instead of the orzo. Also a bit of cream is nice. You can also substitute 1/4 cup (or less) of balsamic vinegar for the sherry.

Shrimp and Broccoli

Absolutely delicious! However, to make a healthier version without the MSG, add a cup or so of roux thinned with milk instead of the soup. Delicious and nutritious :)

Blueberry-Lemon Crumb Bars

These were absolutely delicious just after they cooled down a bit and were still slightly warm. They didn't taste so good the next day however and I was pretty disappointed. Something about the blueberries the next day seemed to turn more to taste like dates. Much better for serving immediately.

Garbanzo Bean Chocolate Cake (Gluten Free!)

This is an amazing cake but only served the next day. I made it twice - the first time I served it the next day and it was extremely impressive. The second time, I made it in the morning and served it for dessert. Even when I had a piece I was really disappointed. The next day it was absolutely delicious. MADE BETTER BY: Use the whole package of chocolate chips and reduce the sugar by 1/4 cup, add a few heaping tablespoons of cocoa and 1/4 tsp of almond extract!!

Quinoa, Beet, and Arugula Salad

Simple and surprisingly delicious! I served this for vegetarian guests with grilled portobello mushrooms and sliced tomatoes drizzled with olive oil and garlic. Big hit! Definitely a keeper :)
