Patriotic Pasta

This is one of my favorites. If I am short on time I will skip sautéing the garlic and basil. Just use a little oil on the pasta so it doesn’t stick and add a bit of basil. I will also skip the cauliflower if I don’t have it and it is still great!!! Make the extra dressing, it is so good you will want to add a little more. It was in the TOH magazine as part of a 4th of July menu which would explain the name. I wish they would rename it because it is a great recipe that might get more attention under a different name. Try it!!

Homemade Vanilla Extract

I used about 8 pods split lengthwise in a bottle of Smirnoff exactly like the one in the picture (I think it is 750 ml). After 3 weeks it is so dark you have to hold it up to the light to see the pods inside. It smells wonderful, just slightest smell of Vodka left but I don’t think it will be there much longer. I have to try very hard to wait until it is ready before I try it. I will be putting it though a coffee filter to get all the seeds and stuff out. I read that if you dry out the pods when you are done and add them to a plastic bag with sugar it will flavor the sugar, good for baking and decorating cookies and cakes. I will be trying that when my vanilla is done.

Made the following changes based on reviews. ½ tsp thyme (was just enough), 6 eggs (a bit dry next time will use all 8), threw the garlic in with the onion to cook for the last min, used 1 ½ C cheese. It was awesome and so easy. I loved the flavor and can not wait to make it again.

Taco Pie

I had to serve the sour cream on the side because of a picky eater and also had guacamole on the side as well. I added a layer of refried beans and some salsa to it the dish. I baked it in a 9x9 dish next time I will try a 9x13 and use 1 ½ lb of beef since I will be using the larger dish. There was a lot of dough left and I think it will fit a 9x13 well. Very good, quick dinner. Will be making again.

Sangria! Sangria!

Awesome.... I was making this for a large group and had a hard time figguring out how much alcohol to buy. Here is what I bought to make enough to make 5 times the recipe (30 servings). 4L jug of Carlo Rossi Sangria wine, 750 ml bottel of Blackberry Brandy, 750 ml bottel of triple sec, and a couple of 2 liter bottles ginger ale. I used all the wine and most of the brandy and triple sec. I added the ginger ale before serving and only used about a 1/2 a bottle (wanted to add more so that it would serve more people but the taste testers said it was great and not to add any more). I did not use sugar and made it the night before. I should have made the serving for 60 or even more because it went fast. Will absolutly make again, and I dont even like wine!!

Sweet 'n' Sour Meatballs

We have been making this for years, well half of it. I have never been good at making meatballs so we by the frozen ones and make the sauce. We serve this as an appatizer. I dont know that I would like it for a meal but to snack on durring a football game it is great. The sauce is so easy to make but you have to crush the gingersnaps til they are like power, put them in a blender or food processor. They will desolve in seconds. Keep in a crock pot and serve with toothpicks.

Coffee Butter Frosting

This was an excellent frosting. I made it as written but then had to add a bit more coffee because it was so thick (probably would not have needed more coffee if I had sifted the powdered sugar). Made enough to frost 24 cupcakes, used the Black Magic Cake recipe and the two were great together. Will be making again. Thank you

Slow Cooker BBQ Flat Iron Steak Sandwiches

Could not find flat iron steak so I used a different kind of beef. Came out nice and tender, falling apart. I also seasoned the meat with flour, salt, and pepper and used thin sliced onion. This is not a recipe that I would say is awesome BUT it was so quick to put together (10 mins start to finish), one bowl and the crockpot to clean, and when I came home from work dinner was done. Could not get any easier. The coleslaw added a nice crunch. Used Sweet Restaurant Slaw from AR which is also very easy and served it with rolls and white rice. Will make again

Streusel Coffee Cake

Very good and moist. I ran out of time so I skipped the icing and didnt miss it. Maybe next time I will put a small amount on for looks but the streusel so tasty you dont need anything else. For the streusel I put it all in a food processor (with a bit of vanilla) and pulsed a few time. Nuts were a perfect size and it all combined great. 45 mins in a bundt pan was perfect, makes more then enough streusel so you dont need to double.
