My first attempt at risotto and it was perfect, better than my fav restaurants! Only added 3 cups of broth and took longer than recipe said, but totally worth it! Used fat free half & half, and only half the amount of grated Parmesan, my attempt to save a few calories. Thanks for sharing this amazing recipe.

Really enjoyed this. Made some minor changes based on reviews and personal preference. Used whole wheat angle hair pasta. Added an onion and mushrooms. Used a combination of garlic and basil infused olive oils, and just added a little at a time until amount I wanted (about 1/4 c.). Added fresh basil and Parmesan cheese when I mixed the pasta with the olive oil/veggies. Oh, and used a combination of black and green Greek olives. The olives added a unique taste to this dish. Very good! Thanks for sharing!

Best Melon, Mango, and Avocado Salad

I thought this salad was amazing. Only changes I made were I didn't pickle the onion, left out the mango and used blood orange infused olive oil. Since I was taking it to a picnic, I mixed everything together instead of putting the fruit over the avocado. Everyone loved it! I'll be making this often!

Baked Cod with Boursin Herb Cheese

This was delicious! Sauteed fresh garlic, onion, pepper & tomato instead of canned. Used light Boursin cheese and substituted olive oil for butter. Will definitely make again. Thanks for a great recipe!

Loved this! Didn't peel veggies or puree and used powdered ginger and green lentiles. Will def be making this again, and again. Thanks for a wonderful recipe :-)

Poblano Chicken Enchilada Casserole

I thought it lacked flavor but my husband really liked it. I'll make again but will add spices next time.

Very tasty!! Followed the recipe except grilled the sausage on the BBQ along with zuchinni and red and green bell peppers. Then chopped sausage and veggies and added to the sauce with pasta. Worked out perfectly since I boiled the pasta and made the sauce while my husband grilled. We used hot italian sausage, but will try a different sausage next time, just for variety.
