I love to cook for family and friends! I am committed to eating healthy. But don't get me wrong, I still love pizza and burgers! I am a nurse and my husband is a firefighter/paramedic. Therefore, alot of the time I need recipes that heat up well for leftovers or just for 1.
Jalapeno Chicken II

I made this for 6 friends the night before we road tripped to Colorado. It was farily cheap as I am a college student! It was super easy and everyone loved it! I marinated the chicken in italilan dressing, low sodium soy sauce, garlic powder and red pepper flakes for 2 hours. Super juicy. I served this with ranch style potatos and green beans. It was definatly a hit!

Wine and Dijon Marinated Pork Loin

Left out the oregano because I dont care for it. I used pork chops instead of loin and marinated them (4 hours) with wine, sour cream becuase I didnt have yogurt, dijon, garlic, lemon juice, the seasoning listed...including the boullion cube. It was sooooooo juicy and delicious. I served with red potatos and asparagus. My husband LOVED it ***EDIT**** I made this again a few weeks ago and I dont know what I did different or wrong but it was disgusting. We took a few bites and in the trash it went. I think it ruined this recipe for me and I wont make it again :(

Slow-Cooked German Short Ribs

Wow. Simply amazing. I used tomato paste instead of chili sauce. I also put a squirt of ketchup & that chinese hot sauce for a kick. 1 tbsp of garlic powder, I thought fresh garlic might overpower the other flavors. I used a cabernet sauvigion wine which was PERFECT! I doubled everything (except the onion)because I had more than 3 pounds. This was resturant quality. It was sweet and tangy. I served with a weight watchers mac and cheese and green beans and BIG glass of southern sweet tea!

It was late and I was looking for the easiest recipe so I could cure my sweet tooth on a rainy night! These were great. I added a pinch of baking soda, some cinamon and nutmeg! These were quick, easy and didn't make a boat load like many other recipes.

I like to make the water recipe but I also had juice from a fresh orange and 1/2 a teaspoon of vanilla. I also add brown sugar and a cinamon stick like another user suggested. It always helps me feel better and get some sleep!

Chicken Broccoli Pot Pie

I used almost 2 cans of cream of potato soup. I had no milk so I thought the cheese was a great idea. I used 3/4 cup of cheddar and used the traditional vegetable melady (corn, carrots, Lima beans, green beans and potato) I added 1/3 cup water since I had no milk. Baked my bottom crust for 7 minutes so the ingrediants would not make it soggy. I added Paula Deens pepper mix, garlicpowder and Mrs Dash table blend. This turned out fabulous! I went back for 2nds and so did the hubby. Oh! I also tossed my chicken in a pat of melted butter because I got side tracked doing laundry and over boiled it. I can't wait for leftovers for lunch!

I made these for a late night snack for me and the hubsters. I didn't cut them into the rectangles. I left the crescent rolls whole. I brushed the rolls with melted butter, Italian seasoning and garlic salt. I will probably use the garlic powder instead of the salt. We ate with pizza sauce. Loved them!!! Next time I will try with pizza dough and see which is better.

Peanut Butter Noodles

I came across this recipe through the Asian Tuna Patties recipe, those who made those suggested these noddles. I just came back from vacation and cleaned out the fridge so I had very limited ingrediants. I used chicken noodle soup broth becuase I had no stock. I used 1 garlic clove and cut all other ingrediants in half due to the fact I was cooking only for myself. I omitted the green onion and peanuts due to not having any. I used a little cornstarch to thicken the mixture. I used spaghetti noodles instead of Udon but can't wait to use Udon or Soba. I added 1 cup of frozen stir fry vegetables and served with the Asian Tuna Patties from this website as well. I will def make this again...and the right way--but it was fine the way I made it.

Teriyaki Tuna Patties

I made these along with the Peanut Butter Noodles from this website suggested by others. I also added 1 cup of frozen stir fry vegetables. This made a fantastic meal. I prefer salmon or potato cakes but the tuna ones were decent. I left out the ketchup and substituted it for Whole Foods Teriyaki sauce. I did not use cornmeal but did use itlian breadcrumbs. Overall, as a meal I really enjoyed the patties and noodles.

Spicy Turkey Burgers

I had saved this recipe to my recipe box today thinking I would use it another time. This afternoon we went to my mother in law's to swim and decided to grill out last minute. Hence, we did not have all the ingredients like ginger, chilis nor cilantro. But I did use fresh jalepenos from the garden and white onion. I used regular mustard instead of dry and did not add cumin because I dont care for it. Instead I added a tablespoon of Emeril's Essence and a few dashes of hot sauce (Red Devil to be exact). I topped my burger with 1/2 a slice of cheese and had a side of grilled zuchinni and french fries. We really enjoyed the burgers, they had tons of flavor. Next time I will make sure I have all the ingredients on hand, Im sure they will be even better!!!

Easy Strawberry Lemonade

I make lemonade from scratch...not the concentrate because it has TOO much sugar. I only like mine with a hint of sweetness. I added the strawberries and they were great. I got to thinking "what if I pureed some strawberries". So that I did. I put about 6 large strawberries in my mini food prep and pureed them and added 2 tbsp sugar to them and poured in the lemonade. It was so refreshing! I still put the frozen ones in too.

Wow, so good. Who would of ever thought? But I agree with over reviews, it can go bitter if it sits awhile. I like to make 1 or 2 glasses...not a whole pitcher. This is an awesome drink after being in the sun all day doing yard work or swimming. I ALWAYS have lemons but not limes so I will substitute and it is still good. Sometimes I add frozen fruit like strawberries, blueberries, rasberries or pineapple to make it extra refreshing.
