The traditional 7 layer dip can be rather fattening, so here is a fresher, lighter alternative. It requires a tad more work but I assure you it is worth it! I always have people asking for this recipe.

Slow Cooker Stuffed Mexican Chicken

"Just throw and go" as momma says. Chicken breasts stuffed with pepper jack cheese topped with tortillas, more cheese and a creamy low-fat sauce. She would serve with a mexican salad of fresh chopped spinach lettuce, black beans, mexicorn, tomato, onion, avocado, lime and a package of dry ranch dressing.

Greek Chicken with Rice

In college my best friend's mom made this everytime we went to visit. It is so tasty, refreshing and easy. The oven really does all the work by marrying the flavors. It is even better the next day. Serve with a side of hummus and pita bread or a fresh steamed artichoke.
