I love the Rockies and spend as much time up in the mountains as I can. I especially love cooking outdoors. I especially enjoying the dutch oven. Nothing tastes better than just about anything that's been cooking in the dutch oven all day. We also grill year round.
Meatloaf

Not bad, I cut it in half to feed 2 and I didn't add the catsup and mustard. I added 1/2 tsp of Schilling Grill Mates, Montreal Steak seasoning. It was really good but I think I'll add more Grill Mate next time. I used the leftover soup and 1 Tbls of Worchestershire to make a glaze for the meatloaf while it baked and a sauce for it once it was done. That worked out very well.

Peach Crisp III

This is a delicious crisp. I couldn't find loose granola so I bought Quaker Crunchy Granola Bars, (Oat, Nuts and Honey flavor) and I smashed a couple of them. It worked really well. Instead of flour I stirred 1 Tbls Minute Tapioca into the peaches and it thickened the juice very nicely. We served it with vanilla ice cream and caramel topping. FABULOUS!!!

Chocolate Cherry Cake I

My whole family loves the cake but we prefer to use Cool Whip, plain or vanilla flavored, as frosting. It's much easier than cooking my own frosting plus we all prefer it to a heavy sweet frosting.

Just use Jello Cook and Serve Lemon Pudding and add green food coloring. It's fail-safe, easy and quick.

Frozen Strawberry Squares

This is really good and fairly quick to mix up. I've tried similar recipes but they didn't have a lot of strawberry taste, this one has really good flavor. I love strawberries! I made a graham cracker crust instead and I used a blender to get the berrys mixed up in the egg white mixture.

Sauteed Spinach and Peppers

I adjusted this recipe slightly. I'm not a big fan of strong garlic flavor so I left out the fresh garlic and used 1 tsp of Mrs Dash Garlic and Herb seasoning. I added 1 cp sliced mushrooms and left out the onion. I also left out the salt, pepper and sugar. Once I put the spinach in I didn't cook it for more than about 2 min and it was almost over cooked in my opinion. I like the spinach just warmed but not really cooked. It was delicious!!

Mexican Pinto Beans

I didn't like this much at all. My husband thought they were ok but they taste more like ham hock & beans that Mexican beans. I put in bacon, onion, garlic, tomatoes and chopped jalapeno along with the serano peppers. It wasn't terribly flavorful and not remotely spicy, even with all of that. Also I don't think the beans should cook so long, mine began to fall apart. I wonder if they lost some of their flavor from cooking so long.

Amish Meatloaf

I left out 1 cp of cracker crumbs, it seemed like a bit much. I also used a little less ketchup and sugar. I didn't use the bacon at all. My husband really loved it. I thought it was missing a little something. Next time I'm going to add a little Worchestershire and some Schilling Montreal Steak seasoning.

Oatmeal Raisin Cookies IV

The first cookies went all flat and spread out so I added about 1/2 cp flour to the dough. After that they came out much better. They have a better consistency. Once I added that flour the recipe was really good.

Cajun Catfish Supreme

I'm going to look for a Cajun seasoning without salt in it because this was way, way to salty and I think it was the Cajun Shake I used. The soup would also be high in sodium but I don't normally find it to be so salty that I can't eat it. We try to eat low sodium so we may be particularly sensitive to the salt but it was bad, we seriously couldn't finish the dish.

Easy Baked Pork Chops

This is a winner! I had 8-1 inch thick boneless loin chops. After browning them nicely I baked them for 45 min and they were done perfectly. I put 4 in a glass dish and 4 in a metal pan to bake and the ones in the glass dish were better. I heated the gravy on the stove because I didn't want it in the pans with the chops. I used 1 can of Cream of Mushroom and 1 can of Golden Mushroom with the wine and it turned out deliciously. It made a lot more than we need but we'll find something to use it on I'm sure.

Fresh Tomato Soup

I tried several of the suggestions to make this and it just wasn't very flavorful. I continue my search for a really excellent tomato soup.
