Butter Roast Chicken

This turned out to be very tender, but I felt guilty with all the butter, while basting and while eating it. My hubby loved it, but I think I'll keep looking for a healthier roasting recipe. Thanks anyway, as I said it was indeed the moistest roast chicken I've had....

Portuguese Pork with Red Peppers

This is SOOOO Good! I doubled the garlic and only had time to let it marinate for 1 1/2 hours, but other than that followed the recipe to a tee. My husband loved it as did I. Served it over buttered noodles with a simple tossed salad. Yum!

Baked Kale Chips

One Word - YUM - These are so good! I used the Mazola Olive Oil spray and just quickly sprayed the leaves and then only use 1/4 tsp seasoning salt with 1/8 tsp garlic powder for one bunch of Kale. Delish ONE BIT OF WARNING THOUGH.... IF YOU ARE ON BLOOD THINNERS YOU SHOULD AVOID KALE AS IT IS HIGH IN VITAMIN K AND CAN CAUSE ISSUES WITH YOUR BLOOD! So Hubby can't have them, but he loved them till I googled Kale and found that out. In the mean time - more for the rest of us.

Mexican Baked Fish

A quick and easy dinner for after work. Served with a a tossed salad and it makes a light and delightful dinner. Hubby who doesn't care for fish LOVED it. I made my with Basa, but have made it with cod and even halibut.

Fresh Semolina and Egg Pasta

Just tried this last night. Wanted to use the pasta/roller/cutter that hubby bought me. I didn't have any semolina flour so just used all purpose flour. Wanted to cut down calories, so used egg whites instead of whole eggs. I've never had a lighter pasta, wonderful texture absolutely divine. Can't wait to make it for guests. Thanks Jen for the recipe. PS by using egg whites instead of eggs you cut the calories in half forgot to mention that when kneading in flour I did not incorporate all the flour or the dough would have been too dry. Important to trust your feel. When dough was a little too dry I wetted my hands slightly and countinued kneading.

Mexican Blackened Corn

Highly recommend this. Hubby is not a big Mexican fan as food is "too hot". Made this as is and he loved it actually had a second serving and was disappointed that there were no leftovers. Made this as is but could not find cotija cheese so subbed with Kraft Tex Mex. I used a little hot sauce to give mine a little more kick. Good recipe served it with Black Beans & Pork Chops from this site.

Curried Chicken Tea Sandwiches

Made these for lunch when my daughter and I attended a glass bead making class. I used all white meat, light mayo then put the filling in pitas. Wonderful bag lunch. Will be making this again!

Cream of Mushroom Soup

Easy, simple gourmet Cream of Mushroom Soup. I followed recipe exactly except used 2 portabella mushrooms (browned), sliced Crimini mushrooms (browned) and then white mushrooms (browned). Probably used about 6 cups mushrooms cooked. Adjusted half & half & chicken stock to get the consistancy I was looking for. Wonderful soup. Will become a staple.
