Awesome flavors! And fairly simple. This is our 2nd year using this recipe and we were so excited when we got a bunch of fresh green peppers through our CSA. I will make it again next week if we get more! I would agree that the rice is slightly crunchy but this year I used brown rice. Not enough to keep this from being an awesome dish. Probably wouldn't hurt to use a LITTLE bit more water, chicken, beef, or vegetable stock and some of the other commenters variations sound yummy too.

Butternut Squash Soup

Just made this for dinner tonight and it was really good. My kids loved it, even my son who generally not touch vegetables. I would agree with some of the reviews that it is a touch on the bland side for adult taste. I will make it again but may use one of the suggested methods to heat it up a bit-maybe cayenne pepper. The trick recommended by Mama Peek to heat the squash in the microwave works excellently. I will use that for another butternut squash casserole recipe that requires pre-baking.

Scotch Broth Soup

Awesome! My whole family loved this! Even my son-4 yr old- who could be Mikey in the old Life commercials. "Mikey likes it.". I followed recipe pretty close. Although I don't think I effectively chilled the broth b/tw b/c I ran out of time. Also, took no longer than 2.5 hrs total for me to get meat off one and tender veggies. Will make double next time. Don't know anything about true "Scotch broth" but I'm sure this recipe would be wonderful with lamb bone as well. I did use beef bone. I've been working backwards lately, ordering foods in stock/season from local coop then finding a recipe to accomodate. I've been pleasantly surprised.

Awesome chocolate ice cream! My family is big into coffee. In fact, I've been referred to as a "coffee snob". So the 2nd time I made this, 2 days after the 1st, I used 1/4-1/2 cup strong fresh brewed coffee and reduced milk by same amount and added 1 cup mini semi sweet chocolate chips, delightful flavor! I only made 1/2 recipe because I have a small ice cream maker but next time I will probably make full amount and do 2 batches (I have 2 freezing bowls) b/c this doesn't last long in my house!

Awesome! We were destined for this dish. I got green pepper, onion, and potatoes in my veggie CSA bag this week and had just happened to order smoked sausage links that had been flavored with green pepper & onion from 1 of the farms in our co-op. Then I got this recipe in the Daily Dish and thought perfect. Cooked very close to recipe except substituted olive oil, added a couple cloves of garlic when I added ingredients to potatoes, and cooked potatoes ~10 minutes extra before adding other ingredients to soften potatoes. Everyone loved this! Even my picky son. I'm sure it would be good with the Italian sausage or healthy version with turkey sausage. Thanks.

Cheesy Sausage Zucchini Casserole

Everyone loved it! Even my very picky eater. Didn't change much. Used mild Italian pork sausage, shredded cheese instead of cubes and I had a mix of zucchini & yellow squash on hand instead of all zucchini. Otherwise I followed the recipe and it was awesome. Will definitely make again.

This was excellent! I made exactly as written and it was awesome after spending several hours outside in chilly weather. The only thing I will change next time will be to make twice as much!
