Ginger Glazed Mahi Mahi

Over the top Fantastic! Caught 4 Mahi Mahi this afternoon in the Caribbean and captain filleted them at the dock. Can't get any fresher. Never made a glaze before. Used the 1/2 tsp ground ginger and grilled in foil tray for 8 minutes as others have done. Served with couscous with a little glaze folded in. Absolutely Awesome.

Roasted Pork Loin

Excellent Pork Loin recipe! I nuked the olive oil, crushed garlic and fresh minced rosemary for about a minute. The garlic disolved into the oil, which I then separated from the rosemary and injected into the pork. The remaining rosemary/oil was rubbed on the roast and stuffed between the two loins that I tied together with roasting twine. I also dusted the roast with onion powder, garlic powder, salt and fresh ground black pepper. Very moist and flavorful!

Smoked Salmon Tortellini with Bechamel Sauce

I found this recipe to be exceptional with the ingredients I had on hand (which is how I found it; searched mushrooms, onions, bell peppers and smoked salmon). I didn't have cloves or milk so substituted 2 tsp dill and fat free half and half. The dash of nutmeg gave a suprising hint of sweetness in the final dish. I also don't have a plethora of saute pans, so sauted the onion, mushroom, asparagus and peppers in butter in one and simmered the cream, butter, dill, bay leaf and nutmeg in another. I whisked in the flour in the same pan after removing the bay leaf. I shreded the smoked salmon and added it to the sauted veggies about 5 minutes before I added the tortellini and sauce just to heat it through. A great bowl food recipe and great use of the last of my alaskan smoked salmon before my next trip there this summer. I'm eager to see how it freezes. It's in my recipe box.

Excellent recipe. I never made beef stroganoff before and I immediately recognized the flavors from when I was kid decades ago, but this was even better than the memories. Thanks for posting.

Tried this out last night on some Ling Cod I brought back from Alaska. I liked the hint of sweetness from the honey and rosemary, and added a 1/2 tsp Old Bay to spice it up a bit more. I ground all the seasonings up in a mortar and pestle and then sprinkled them on both sides of the fish steaks. Yum. Cedar planking is the way to grill fish. Good, quick and tasty recipe.

Made as written but used fresh mushrooms. Good basic recipe but a bit bland. Will add Old Bay seasoning or maybe Tony Chacheres next time I make.
