I had this at Aux Anciennes Canadiens in Quebec City and it was served with a fruit relish made from tomatoes, onions, apples and peaches. The relish is a nice touch.
This is an absolutely terrific recipe and everyone went nuts over it. I served it with a red onion/apple marmalade. I made the following changes. 1 1/2 lbs pork, 8 slices of bacon, 2/3 cup of both celery and onion, 1 1/2 tsp sage. Chicken broth instead of water. 2 or 3 cloves of garlic. (I did use the 1/2 lb veal)
I used a store bought crust, used 2 cans of the condensed mile after carmelizing, added a layer of crushed Skor bars/Heath bars and then added the sliced bananas and whipped cream. Yum
This is absolutely fabulouse and people are crazy about it. This is now one of my treasure recipes and I have made it 4 times. I didn’t cook the ingredients. I used 3 cloves of garlic and 2 Tablespoons of lime juice. I used canned corn. Best made the day before so the flavors can meld.
