I've been making this recipe for years, except I always add a small can of pineapple chunks along with its juice (or fresh if I have it on hand) and a few slices of green bell pepper. The pineapple juice cuts down on the saltiness and gives it a sweeter taste. I also serve it with rice because the juices give the rice a yummy flavor.
Except for baking this for 1 hour instead of 45 mins, I made this exactly as written. My family loved it, even my picky eater daughter who thought it was the best meatloaf ever, especially since it has no onions (which she hates). I didn't think I would like it because of the salsa, but it was really good. Leftovers for sandwiches were good too. Thanks Tinkerbell15.
This chicken recipe was so easy and delicious. Very tender. My very picky 22 year old loved it and even took some to work the next day for lunch. Made it exactly as written except to flatten the chicken breasts before marinating them. Thank you SUZYNAGY.
I used a soft French bread loaf because I had one in the freezer. Absolutely delicious. Came out crispy on the outside and soft on the inside. Thanks to Clair for this recipe.
Very yummy and so easy too. ! As others suggested, bake at a higher temperature if you like them crispier. I made the recipe as is since it was my first attempt, and even though the potatoes were soft, everyone still loved them and all were eaten. So, crispy or not. these are delicious.
Yummy soup! The texture was more like chili, not runny like most soups. I used a small can of green chiles instead of the poblano pepper and also added a small bag of frozen southwestern style corn along with an extra 1/2 cup broth as another suggested. Since we don't like really spicy stuff, I left out the hot sauce. It turned out great. In fact, I don't think making minor changes would hurt this recipe because so many flavors are blended together. This soup was very good the second day as well.

I've been making these wonderfully delicious mini meatloaves for years, only we've called them Lil' Cheddar Meatloaves. And if I'm making them and in a hurry to get dinner done, I just make one large loaf instead, and bake it about one hour. Either way is yummy.
I am amazed that this recipe only has a 4 star average. I have gotten some really good recipes from this site, but this one is one of the best yet. I did take the advice of others and seared the meat first, salt and peppered it, and added 1 tbs cornstarch to make the sauce thicker. My family LOVED this roast. It was fork tender had wonderful flavor, and was so EASY. I have decided to make this for our Christmas dinner. Thanks Dawn for such a delicious recipe.
LOVE this recipe which is the same way the Spaghetti Factory makes it. The only problem is that I now live in TX, and there is no Trader Joe's or Spaghetti Factory to buy the Mizithra cheese. Does anyone know where else it can be bought?
Great recipe! I used beef. Also added quartered potatoes and carrot chunks about 4 hours before it was done as one reviewer suggested. Everything was DELICIOUS! I also used cornstarch in a small amount of water to thicken instead of the butter and flour. Thanks for the recipe.
Took a chance with this recipe even though it sounded strange using root beer, but so glad I did. My husband and I loved this, and it was sooooo easy! The only think I'd add (if you don't mind the calories) is serving extra barbecue sauce on the side. Thanks Livie's Mammy for an easy and great recipe.
