Vegan Hot Fudge Sauce

This hot fudge sauce has no dairy, but tastes just like regular hot fudge sauce. Instead of using heavy cream and butter, it calls for coconut milk and Earth Balance Vegan Buttery Sticks. I make it for my daughter who has food allergies, and she loves it!

3/4 cup coconut milk
4 Tbsp. Earth Balance Vegan Buttery Sticks (or equivalent vegan margarine)
1/4 cup sugar
1/4 cup light brown sugar, packed
pinch of salt
1/2 cup cocoa powder
1 tsp vanilla extract
1 ounce semi-sweet or dark chocolate chips

Step 1
Place the coconut milk and margarine in a microwave-safe 1 qt. glass dish and microwave, uncovered on high just until boiling, about 2 to 3 minutes.

Add the sugars and whisk until dissolved.
Step 3
Whisk in the remaining ingredients until completely blended. Microwave on medium (50%) power for 1 minute. Serve warm.
Step 4
Sauce can be reheated on medium power until heated through.
