Shrimp Scampi with Roasted Asparagus
This is a great date night meal! It’ll make a ton of leftovers, so you can send some home with your boo. ??
I make this with a decent bottle of Savignon Blanc because the acidity in the wine pairs well with the lemon juice and the fresh cut grass-like aromas of the asparagus. Chill the rest of the bottle and have it with your meal! Remember to always use a wine that you enjoy the flavor of by itself if you’re going to cook with it because the food takes on the flavor of the wine.
Slow Cooker Pork and Sauerkraut
I never made pork and sauerkraut before this. We just recently bought a house and prior to that my mom would always make the pork and sauerkraut for the new year. I’m stubborn and really don’t like asking for help so I really just winged it and, to my surprise, it came out perfect!
This recipe really takes a lot of the sour out of the sauerkraut, though. So if you’re a kraut lover, try omitting the apple and onion.

Breakfast Egg Salad
This is a really quick, easy and healthy breakfast for one that can easily be doubled or tripled if you're feeding a family. I love the way onions and celery smell when it's cooked with rosemary. It reminds me of the beginning of autumn.
When it's done, it looks like a lot but you have to realize its mostly all veggies! The measurements are all approximate. I don't measure out things when I cook, I just eyeball them. So feel free to adjust ingredients to your liking. Enjoy! :)
Creamy Curry Chicken & Broccoli Pasta
This is an easy dinner. Spicy and delicious! Serve with garlic bread or plain italian bread.
