Wow - great recipe!! I made it tonight for a quick dinner. Didn't have sun-dried tomatoes, so I skipped those and added red onion, sunflower seeds, and dried berries. We scooped it onto crackers, and I served a salad with it. I was hoping for leftovers...but we ate it up! I'll be making this again for sure!!
LOVE, LOVE, LOVE these!! I tried them out last week when our vegetarian neighbors came over, and have had them three more times since! I can't get enough. My only change was using frozen corn instead of canned, and I baked them in the oven like some other reviews suggested. They came out perfectly. Serve with salsa & sour cream for a killer quesadilla!
This was an easy, fantastic pancake recipe. I made it for 3 boys, all ages 6 and under - they declared them to be "the best pancakes we've ever eaten!" They gobbled them up. I'm glad I doubled the batch or else I may not have gotten any myself. Thanks, Kris. I'll be making these again and again.
