These are like Swedish pancakes and I amended mine slightly so that it would be similar to my mother-in-law's own (she doesn't have a recipe herself, so I had to guess as to the measurements!) I changed it from 1/4 tsp salt to 1/2 tsp and added a 1/2 tsp of vanilla sugar to the mix. I too used an electric mixer for mine. My Swedish husband enjoyed them with strawberry jam on top.

Sweet Potato Pie

First time making a Sweet Potato Pie and am quite happy with it. My husband, who when he saw the boiled sweet potato said it didn't seem appealing, liked it and took some to work today. As I can't get pumpkin or canned pumpkin where I live in Sweden, this will do the trick!

Light Wheat Rolls

I thought that these rolls were lovely. They were nice and soft. I made a half batch as there are only two of us in the family and took the advice on how freezing them after only half cooking them. I did this and just defrosted them before putting them back in the oven for another 4-5 minutes. They tasted just as if they were newly baked. I do wish I put a little more salt in it, maybe 1 1/2 teaspoons next time. Otherwise, I wouldn't change a thing!

White Chocolate, Chocolate Cookies

Great cookie! Will definitely file it away into my recipe book. I didn't have enough white chocolate, only enough for 1 cup, so I made up the difference with a cup of walnuts. Was a nice nutty, crunchy addition to the cookie. This made so many cookies (I got 33 LARGE ones out of it) that I'm sending some with my Husband to his work place so that they can enjoy some during their coffee break.

Ninety-Minute Cinnamon Rolls

Absolutely fantastic! Has to be the easiest and best cinnamon rolls i've ever made. Made them in muffin tins and baked them for 17 minutes instead of the 20 as they were turning brown. Ended up so soft and squidgy, like cinnabons! Used chopped walnuts instead of raisins and topped it off with the cream cheese icing as suggested by MPCHARVAT in the first review. Excellent and definitely a keeper!
