Really good way to use fresh rhubarb. I added a bit of cinnamon & cloves to the rhubarb mixture as we like that flavor with the rhubarb. Very good. Did line my pan with parchment paper for easier removal.

Blackberry Upside Down Cake

Made this in a bundt pan. Beautiful when turned out. Found the cake a bit dry the first day, but after storing in airtight container overnight, it picked up moisture. Very good flavor.

Zucchini Brownies

Really glad I read the other reviews. Batter is more a crumble than a batter, but are the finished brownies delicious. Moist and fudgy. UPDATE - I ran short of zucchini (who does that), so added 1/2 cup of unsweetened applesauce. Turned out a little more cakelike, but still very moist and delicious! UPDATE - Two things: (1) These freeze beautifully when wrapped in foil. A nice midwinter treat! (2) i've discovered the more you stir these, the more cakelike they become.

Boardwalk Quality Maple Walnut Fudge

Just finished making these. I substituted 3/4 cup chunky peanut butter for part of the butter as my family loves peanut butter and chocolate. Instead of using the wrapped kissed, I bought the miniature peanut butter cups that are unwrapped and just the right size. Heavenly. Hope they make it into the Christmas gift boxes!

No-Fail Pie Crust

I'd almost given up baking pies and resorted to the refrigerated crusts for years as I couldn't replicate my grandmother's flaky crusts. Tried this one on a lark and am hooked. Haven't had pie crust this flaky anywhere since my grandmother quit making pies over 40 years ago. This one's a keeper. Even the bottom crust of fruit pie was flaky and my non-pie loving husband came back for more.

To Die For Blueberry Muffins

Made these with huckleberries and they were fantastic. I was lazy with the topping and just sprinkled cinnamon-sugar on top before baking.

Downeast Maine Pumpkin Bread

Absolutely the BEST pumpkin bread I've had anywhere. I did use 1/2 cup applesauce for 1/2 the oil & baked in 2 loaves instead of 3, so had to bake a little longer. Husband, who's not a pumpkin lover, said this is a keeper!

Loaded Chicken Potato Soup

Hands down one of the best potato soups I've had anywhere! Not really sure the chicken was even necessary. I subsituted frozen peas for the broccoli as that's what I had on hand.

Zucchini Pickles

Just opened our first jar of these. A delicious bread and butter style pickle. Maybe not quite as crunchy as a cucumber pickle, but very good. I used Walla Walla sweet onions in these, and the only pieces are to die for! Husband said they were as good or better than the store-bought bread and butter slices I'd been using. Will do again. I agree with other reviewers that these did not make as many jars as indicated. I doubled the recipe and got 6 pints of pickles.

One Bowl Chocolate Cake

One of the best chocolate cakes I've ever made and one of the easiest. Only hint, DON'T try to use 8" pans. Had to clean my oven after that mistake!

UPDATE: Just did this in three 8" pans and baked for 25 minutes. Perfect for a taller cake.
