Cooks for 6 inclues me, my husband, and my 4 kids all under 8 years old. I'm a stay at home mom, and making wholesome, delicious meals from scratch is really enjoyable to me. I love cooking for friends/groups/parties. Watching people eat my creations and smiling is the best feeling.

I thought these had a very good taste to them. After reading the reviews I started out with less milk, and wound up adding more as the batter was too thick. To me, cupcake batter is the same consistency as cake batter- fairly runny. I also subbed applesauce for butter (same measurement) - maybe that thickened it up? I made mini cupcakes, and they did muffin-dome up a little, but I don't think that's a bad thing- and I think they will go over well with the kids at the school party!

very good! We're not olive lovers here, so I omitted those, but I added refried beans (I did keep the chili beans) because to me, Mexican dish just isn't complete without refried beans! :) Very good recipe, easy to alter without messing it up.

Easy Breezy Casserole

It was pretty bland, but as it states, very easy- and easy to alter by adding vegetables, sour cream and cheese. I also topped with a mixture Italian breadcrumbs and grated cheddar.

Egg Salad Sandwiches

for me this was just a little bland. I've never had egg salad without relish, so I added some diced bread and butter pickles (I had no actual relish on hand). I also added paprika and omitted the dill weed, mainly because I didn't have any, but I might get some and try next time. Like others I also used fresh chopped onion instead of flakes. I stuck with 8 eggs and just used the rest of te recipe as a guide rather than actually measuring everything. oh, and I used about 1 to 1.5 tsp mustard instead of mustard powder (like you would potato salad) all in all a good recipe with some tweaking.

Pumpkin Cheesecake I

I used two cake pans sitting in a cast iron skillet with water to the rim of the cake pan. I also used a graham cracker crust and 2 cups pureed pumpkin instead of the can. This was delicious!

These were awesome!! If you roll them a little thicker they'll have more 'softer' middle and a nice hard crust. I doubled the recipe to make sure I had enough for my brood, and I should have quadrupled it! I didn't want to use sesame seeds, and I wanted to make them a little more interesting, so I added 1 tbsp Italian seasoning and 3/4 tbsp garlic powder in before adding the milk. I actually didn't use all the milk and the dough was good- so be sure you add it just a bit at a time so you stop before you have too much. Instead of dipping them into butter, I just painted melted butter on either side and baked. These are great alone, or with a dipping sauce! Wonderful texture and flavor! And fast!

good for a fast to make, fast to eat salad. I loved the idea to add the yogurt! Definitely added something to it, but it does get runny quick. The second time I made it I added fresh apples and oranges and about 3 tbsp of sugar. Very good dish!

Stuffed Peppers with Turkey and Vegetables

I didn't quite understand putting the bellpeppers in the stuffing- the outer pepper was more than enough pepper flavor for me, so I took out the extra. Try adding some cooked white rice to the stuffing!

Blue Cornmeal Pancakes

didn't use the pine nuts, did use yellow corn meal, and bleached AP flour, I've never heard of blue corn meal. The texture was a bit odd. The flavor was good, but the texture was just off to me.

I agreed with the other reviewers- fry up the hamburger with the chopped onion and diced garlic, drain, then put in the bottom of the casserole dish. I actually chopped up about half a large zucchini from my garden and added it to the onions and garlic as they sauteed (before adding the beef to the skillet) mainly just to add a veggie to this dish as it's a meal in itself. It was very delicious! Also, after I emptied the can of condensed cream of mushroom soup into the bowl, I refilled it all the way with milk instead of just half way. I'm not sure how it would have been with just half the milk, but I found the amount of creaminess to be perfect with how I did it. I also did similar to another reviewer and laid some slices of cheddar down- I put mine on top of the soup layer, so it actually went: meat, soup, cheese, tater tots. Then upon serving I added a few grates of cheddar on top of the hot dish once it hit the plate. Wonderful! And the kids LOVED it!
