Spicy and sweet, with no actual bourbon, this faux-chinese chicken dish is great served over rice!
Heat oil in large skillet. Cut the chicken into bite-sized pieces. Add chicken to skillet and cook until light brown, then remove from the pan. Add remaining ingredients, minus the vegetables, and heat until well-mixed and dissolved. Add chicken and bring to a hard boil. Reduce heat and simmer for 15 minutes. Add the vegetables and cook 5 minutes more. Thicken sauce with dissolved cornstarch. Serve over rice.
