Store bought gorgonzola raviolis with sweet potato cream sauce, served on top of sauteed kale. I bought these ravioli's from Trader Joe's, but wasn't sure what sauce to serve with it, so I came up with this recipe. The Kale is great with it, but can be omitted, I just like to have some veggies in every meal!

  • peel and dice the sweet potato into 1/2" cubes and boil until tender. Drain and set aside.

  • saute diced onion in olive oil and butter until clear

  • add flour and cook for 2-3 minutes

  • whisk in milk to thicken

  • In a blender puree the cooked sweet potato, brown sugar and the cream mixture. Return to pot, season with salt, pepper, thyme. Add more milk if you like a thinner sauce, and allow to simmer.

  • In a large pan, saute slice onion in olive oil until clear, add kale and cook down.

  • Cook raviolis according to packaging

  • Serve raviolis on top of sauteed kale, topped with sweet potato sauce. I garnished with chopped bacon and parmesan cheese.
