Hi Everyone! Cookbooks are my downfall...I read them cover-to-cover. At one point in my life I could tell you which book had which recipe, but I'm way past that now. I know you can find anything and everything online but I still need my books!!
Shrimp Scampi Cheesecake Appetizer

Wonderful!! I halved the recipe but used the full 1 lb. of shrimp. Used the mini cups but, as a personal preference, no onion or salt but generously sprinkled shrimp with Old Bay after cooking. Used Fat Free 1/2 & 1/2 instead of cream just to make me feel like I was saving calories. (Yeah, right!!) My husband isn't usually a fan of smoked gouda but he loved these!

Five-Minute Blueberry Pie

This pie is so fresh and wonderful! I followed the suggestion by "bizzygoddess" with 1 cup of berries in the sauce and then removed from heat and added another 4 cups. I did not increase the sugar with the extra berries but did add a squeeze of lemon juice. Homemade graham crust and whipped cream - so good!

Chex® Pumpkin Pie Crunch

I have made this several times in the past few months and it is always a hit. The first time I forgot the vanilla but the flavor was so wonderful, I have not added it since. Wanting to double the recipe without too much of the same cereal, I added 2 cups each of Cinnamon Toast Crunch, Golden Grahams and Snyder's regular "Snaps" pretzels. The Snaps are a great addition, the little squares in the pretzel hold the sugar/spice mixture perfectly and the salt gives a nice contrast. Just because of the large amount I was making, I baked the mix in a large roasting pan at 250 degrees for 1 hour stirring every 20 minutes...then let cool completely. Wonderful!!

Made these with Snaps for a Mardi Gras Party. Excellent kick. Followed other suggestions...in a bowl for a couple of hours and in the oven for about 20 minutes. Think I might try adding some nuts next time.

Chicken Pot Pie

Doubled the sauce with rotissiere chicken in individual bowls topped with mashed potatoes. Excellent buttery flavor!

Very Good. As others did, lean meat and cut down on the brown sugar in the sauce - Excellent flavor and so easy in the crock pot.

Marinated Mushrooms

Delish!! So fresh tasting. Couldn't find really small mushrooms so I did cut some of the bigger ones and they were just fine. My husband loved them.
