Oatmeal Pancakes

I used 1% Lactaid milk in place of the buttermilk, and margarine in place of the butter. I also changed the sugar to 1 tablespoon and used brown sugar as suggested here by other commenters. Wonderful, and so hearty! They aren't too fluffy, either, which is a pet peeve of mine when it comes to pancakes.

Basic Mexican Guacamole

This is a perfect base recipe for guacamole. I added more onion and tomato to mine because that's how I like it. I also leave out the spicy peppers as I am not a fan, and it still tastes great! Definitely use coarse/kosher salt versus table salt.

Creamy Black Bean Dip

I didn't have a measuring spoon so I winged it with the measurements. I used a masher instead of a food processor, so it was more chunky. Per some other reviews I added less balsamic, less ketchup, and no cider vinegar. Also added some garlic powder. It's definitely different, and I rather liked it! Very quick to make. Next time I will add fresh onion.

Homemade Blueberry Pie

My first blueberry pie, and it came out great! I used frozen whole blueberries, from a batch I had picked over the summer. Per other reviews, I used a little extra cornstarch to keep it from being runny, and that worked great. My family really enjoyed it over Thanksgiving!

Soft Oatmeal Cookies

I skipped the chilling of the dough, as well as the flattening the cookies with a sugared fork. I also added a cup of craisins. The cookies came out soft and delicious! A definite keeper.

Homesteader Cornbread

Tried this for the first time tonight. Switched the cornmeal and flour amounts, soaked the cornmeal in the milk for 10 mins, and whisked it for 5 mins before baking. It hardly rose at all and the center is very doughy. Will not make again.
