I followed the recipe and it turned out delicious. The wife ate it up and she is usually picky about food. I would suggest getting fairly big chicken breast that way after you pound them out you can easily fold them over the ham and cheese. Make this recipe at least once!!

Cashew Chicken with Water Chestnuts

I added a small carrot but followed the recipe other than that and it was great. The ginger was just the right amount and I used Sriacha hot sauce that was the perfect amount. The cornstarch helps the sauce get thick and coats the veggies and chicken. The prep takes longer than the cooking. Oh, don't forget to cook the rice beforehand.

I enjoyed the final product but the original recipe could use a little tweaking. I used less tomato sauce and ketchup on the top of the loaf so it would get dried and crunchy. Also, I like to bake the loaf in a broil pan as to keep it from sitting in its own fat. The recipe is great if you tweak it to your taste.

I followed recipe and they came out great. Very light and fluffy. I was suprised how easy they were to make. Worth trying.
