Okra and Tomatoes
I love Southern food, and okra is no exception. During the summer, when okra can be bought fresh in farmer's markets in Texas, I love purchasing bunches of the stuff and making this dish.
Thai Chicken Stir-Fry
Stir-fried chicken thighs and vegetables with delicious Southeast Asian flavors, served on top of steamed jasmine rice.
Sauteed Patty-Pan Squash
Rarely can you find patty-pan (aka scalloped) squash in the grocery store. However, many farmer’s markets have them. In Texas, it seems that every farmer’s market is overflowing with squash come June. However, if you can’t find them, any summer squash will do. I also have made this recipe using yellow squash and zucchini and it was quite delicious. The freshness of the ingredients scream “summer.”
Thai Rice Salad
This recipe occurred semi-accidentally. I was studying various thai recipes and examining the flavors, and went home to stare at my fridge, and out came this recipe.
Orange Fennel Salad
A wonderful, fresh, summery dish, and very easy to make. I’m relatively new to fennel, but this recipe definitely highlights the wonderful, licorice-y flavor and compliments it well with the citrus. This would be a great choice to accompany a fish or chicken dish.
Slow-Cooked Pork for Tacos
I love carnitas, but don't have the time to stand in the kitchen for hours to make them. This recipe uses the slow cooker to make shredded pork that is similar to carnitas, but makes a quick, yummy dinner. Serve with tortillas, salsa, cheese, lettuce, and cilantro.
Black Bean Soup
I love black beans, and this recipe is no exception. Not to mention, it takes less than 30 minutes to prepare, and it’s a low-cost meal. This soup is tasty with crusty french bread, tortillas, or cornbread. I personally love tortillas or tortilla chips.
I love the beans served at a lot of Mexican restaurants I frequent, and so I decided to take a crack at making them at home. Don't be afraid of the amount of chiles in this recipe, the long simmer time mellows out the spiciness.
Italian Tomato Sauce
Everyone in the house loves spaghetti, but I wanted a lower-sodium version of the canned spaghetti sauce. This recipe is easy, is healthier, and tastes tons better than those canned versions!
Saffron Veggie Rice
I dislike a lot of the boxed rice dishes they sell at the stores, most are loaded with salt. This is a tasty alternative, and is easy to make. This is wonderful with baked chicken.
